I have always enjoyed chicken salad recipes but not all the calories and unhealthy fats that came along with it. This recipe is the healthy alternative.
What is also great about chicken salad is that you can make a big batch and store it in the fridge for later. It can be eaten as a snack, a side dish or even a meal. I can imagine that this would be a good meal to pack for a competition as well.

Chicken Salad Recipe With Grapes, Apple, and Celery (AIP, Paleo, Dairy-Free)
- Saute the diced chicken breast in coconut oil until cooked.
- Wait for the chicken to cool then add it to the halved grapes, diced apple, and diced celery in a large bowl. Add in the coconut milk and salt to taste.
- Toss well.
