This is SOOOO delicious!! You just throw all the ingredients into a stock pot and let it cook. Of course, take a look at the directions as you need to add a few ingredients at a time. Now let’s talk about those ingredients and make it a more Paleo version.
Ingredients: vegetable oil, ginger, lemon grass, red curry paste, chicken broth, fish sauce, brown sugar, coconut milk, shiitake mushrooms, shrimp, lime juice, salt & cilantro
-Do NOT use vegetable oil for anything. Instead use coconut oil in equal parts.
-I didn’t have lemon grass so that was omitted
-Bone broth would be best but I used organic free range chicken broth from Trader Joe’s
-I did NOT use fish sauce or brown sugar
-And I added about a teaspoon of minced garlic at the end.

Five ingredients – how easy is that??!!
Mix your coconut flakes, nut butter (I used almond butter), coconut oil, vanilla and chocolate chips. Roll into 1 inch balls and place in fridge or freezer for a few minutes and enjoy!! I think I am going to make some more right now. My mouth is watering as I am writing this. Yum 🙂 The link is below.
