Oh my gosh! Sweet Potato Nachos are so yummy. And a much healthier substitute for the traditional nachos. I like eating nachos while watching my favorite sporting events. I made these for the NCAA Championship game. I love me some DUKE basketball. The picture above is the actual dish I made. My husband and I shared it, and the kids had a couple of bites too.
