Grilled Sweet Potato Salad

 

GRILLED SWEET POTATO SALAD WITH SMOKED TOMATO VINAIGRETTE
Serves: 4-6 servings
INGREDIENTS
  • 1 large sweet potato, peeled
  • 12 oz frozen organic corn kernels, defrosted
  • ½ red onion, chopped
  • 1 red bell pepper, chopped
  • ¼ chopped fresh cilantro
  • For the Dressing:
  • ¾ cup olive oil
  • ½ cup apple cider vinegar
  • 2 medium size vine ripened tomatoes, cut into quarters
  • 1 clove garlic
  • 2 tsp liquid smoke
  • Salt and pepper to taste
INSTRUCTIONS
  1. Slice the sweet potatoes horizontally, into ¼ inch thick disks.
  2. Brush with coconut oil.
  3. Grill for approximately 5 minutes each side. Potatoes should be firm, but slightly softer on the inside.
  4. Chop grilled potatoes.
  5. Mix all the chopped vegetables together (except the cilantro)
  6. Make the dressing by blending all the ingredients together for about 30 seconds, or until tomatoes are completely liquified.
  7. Add about ⅓ cup of dressing to the salad and toss to coat the vegetables.
  8. Add chopped fresh cilantro and sprinkle with salt to taste.
